Nothing says nostalgia to me more than homemade dumplings, known as “gyoza” in Japanese. I have many memories of folding dumplings with my mom growing up.
Dumpling sauces are common in Japan, however, the sauces tend to be simpler compared to the more complex or heavily seasoned versions you might find in other cuisines. The standard Japanese gyoza sauce typically consists of soy sauce with an optional drizzle of rayu (chili oil) for a spicy kick.

Unlike in Chinese or Korean cuisine, where dipping sauces can feature strong flavors like black vinegar, garlic, or chili paste, the Japanese approach often highlights balance and simplicity.
Whichever route you choose to go, the process is straightforward and will make you the most amazing dumpling sauce: simply mix the ingredients in a small bowl, taste, and adjust until you’re happy with the balance of flavors.

The sauce can be made ahead and stored in the refrigerator for a few days, allowing the flavors to meld even more. With homemade dumpling sauce, you’ll elevate your dumpling experience to new heights while enjoying the satisfaction of crafting something uniquely yours.

- Green Onions: Adds freshness, mild onion flavor, and a pop of color.
- Pepitas (Pumpkin Seeds): Provides a crunchy texture and a subtle nutty flavor.
- Peanuts: Adds crunch, richness, and a classic nutty depth to balance the sauce.

- Rice Vinegar: Adds bright acidity to balance the richness and spice.
- Water: Helps thin the sauce slightly so it coats the dumplings evenly.
- Sugar: Balances acidity and salt, adding a touch of sweetness.

- Ginger: Adds warmth, slight spiciness, and freshness.
- Toasted Sesame Oil: Imparts a rich, nutty aroma and subtle flavor.
- Chili Crisp: Adds heat, texture, and a complex, spicy-salty flavor.
- Sichuan Pepper Oil (optional): Brings a numbing, tingly sensation and extra depth.
- Roasted Sesame Seeds (optional): Adds additional nutty crunch and visual appeal.

Homemade Dumpling Sauce

Makes enough for 8-12 dumplings
- 2 tablespoons green onions, thinly sliced
- 1 tablespoon pepitas (pumpkin seeds)
- 1 tablespoon roasted peanuts
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon water
- 2 teaspoons sugar
- 1 tablespoon garlic, minced
- 1/2 tablespoon ginger, grated or minced
- 1 teaspoon toasted sesame oil
- 1 tablespoon chili crisp
- Optional: 1/2 teaspoon Sichuan pepper oil, 1 teaspoon roasted sesame seeds
Instructions
- In a small bowl, combine all the ingredients. Mix well to combine.
- Taste the sauce and adjust as needed – add more chili oil for heat, vinegar for tang, or sugar for sweetness. Serve alongside cooked dumplings, and enjoy!
