Dan Dan Noodles are a classic Szechuan street food dish of chewy wheat noodles served over a rich, spicy, nutty sauce with savory toppings that are mixed together before eating.

Protein & Noodles:
- 3 garlic cloves, minced
- 1/2 lb ground pork (substitute any ground meat or crumbled firm tofu)
- 3 green onions (separate whites and greens)
- 1 tbsp Shaoxing rice wine (substitute rice vinegar)
- 1 tbsp dark soy sauce (substitute regular soy sauce)
- 1/4 tsp white pepper (substitute black pepper)
- 2 servings thin wheat noodles
Sauce:
- 2 1/2 tbsp Chinese sesame paste (substitute peanut butter or tahini)
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- 2 1/2 tbsp black rice vinegar (substitute rice vinegar)
- 1 garlic clove, minced
- 1/2 cup noodle water (adjust for sauce thickness)
- 1 tsp sugar
- 1/4 cup chili oil (adjust to desired spice preference)
- 1/2 tbsp Szechuan peppercorns (optional)
Instructions
- Boil thin wheat noodles according to package instructions until al dente. Reserve some noodle water before draining.
- Heat a skillet over medium-high heat. Add the white parts of the green onions and minced garlic, sauté until fragrant. Add ground pork or crumbled tofu, Shaoxing rice wine, soy sauce, white pepper, and water. Cook until the pork is browned or tofu is heated through.
- In a small bowl, combine sesame paste, soy sauce, sesame oil, black rice vinegar, minced garlic, sugar, chili oil, some reserved noodle water, and optional Szechuan peppercorns for that signature numbing flavor. Adjust water or chili oil to reach your preferred consistency and spice level.
- Place the sauce in a serving bowl. Top with the noodles, followed by the cooked protein mixture. Sprinkle with the green parts of the green onions.
- Mix everything together just before eating to coat the noodles in the rich, spicy, nutty sauce. Enjoy immediately!
