Simple Homemade Dumpling Sauce

Nothing says nostalgia to me more than homemade dumplings, known as “gyoza” in Japanese. I have many memories of folding dumplings with my mom growing up.

Dumpling sauces are common in Japan, however, the sauces tend to be simpler compared to the more complex or heavily seasoned versions you might find in other cuisines. The standard Japanese gyoza sauce typically consists of soy sauce with an optional drizzle of rayu (chili oil) for a spicy kick.

Unlike in Chinese or Korean cuisine, where dipping sauces can feature strong flavors like black vinegar, garlic, or chili paste, the Japanese approach often highlights balance and simplicity.

Whichever route you choose to go, the process is straightforward and will make you the most amazing dumpling sauce: simply mix the ingredients in a small bowl, taste, and adjust until you’re happy with the balance of flavors. The sauce can be made ahead and stored in the refrigerator for a few days, allowing the flavors to meld even more. With homemade dumpling sauce, you’ll elevate your dumpling experience to new heights while enjoying the satisfaction of crafting something uniquely yours.

  • Chili Crisp or Chili Oil: This provides a spicy kick with its combination of heat, oil, and crunchiness.
  • Garlic: Fresh garlic introduces a sharp, pungent aroma and flavor, adding depth and a slight zing to the sauce.
  • Toasted Sesame Oil: This fragrant oil adds a nutty, toasty flavor that enhances the richness of the sauce.

  1. In a small bowl, combine the soy sauce, water, and sugar. Stir until the sugar dissolves completely. Add the chili crisp or chili oil, minced garlic, toasted sesame oil, and rice vinegar. Mix well to combine.
  2. If desired, sprinkle in roasted sesame seeds and chopped green onions for added texture and freshness.
  3. Taste the sauce and adjust as needed—add more chili oil for heat, vinegar for tang, or sugar for sweetness. Serve alongside my freshly cooked dumplings, and enjoy!
