Cowboy Candy Recipe: A Sweet and Spicy Snack

Cowboy candy, or candied jalapeños, is a Southern classic that pairs sweet syrup with spicy peppers. While the exact origin is unclear, it likely gained popularity in the American South, particularly in Texas and neighboring states.

Ranchers and cowboys appreciated it as a way to preserve peppers while adding flavor to meals, and it eventually became a favorite at Southern gatherings, potlucks, and home pantries.

And if you’re like me and trying to figure out what to do with your pepper harvest, this is the perfect snack to make! Even my wife, Kyrié, who despises jalapeños loves cowboy candy!

The beauty of cowboy candy lies in its versatility: you can make it mild or fiery, sweet or spiced, and store it in the fridge or canned for long-term use.

Small-Batch Recipe (1 Quart Jar)

Core Ingredients:

  • ¾ lb fresh jalapeños (12 – 14 medium, sliced ¼”)
  • ⅔ cup apple cider vinegar
  • 1½ cups granulated sugar
  • ⅛ tsp turmeric
  • ½ tsp garlic powder

Optional Add-Ins (choose 1 – 3 for balance):

  • For Heat:
    • Pinch of cayenne, serrano slices, or a few habanero slices
  • For Sweetness:
    • Replace ½ cup white sugar with brown sugar (adds rich, molasses-like depth)
    • Add 1 Tbsp honey or maple syrup
  • Warm Spices (max 2 – 3 total per jar):
    • Ground allspice: ¼ tsp
    • Whole allspice berries: 2 – 3 (remove after simmer)
    • Cinnamon stick: 1 small (remove before jarring)
    • Star anise: 1 pod (remove before jarring)
    • Whole cloves: 2–3 (remove before jarring)
    • Fresh ginger slices: 2 – 3 (remove before jarring)
    • Ground ginger: ¼ tsp
    • 1 – 2 garlic cloves (thinly sliced)

Tip: Avoid combining too many strong spices! 2 – 3 items is ideal.

Instructions

  1. Wear gloves (optional) and slice the jalapeños ¼”. Remove the stems, and deseed if desired (for less spice).
  2. To a medium-sized pot, combine vinegar, sugar, turmeric, garlic powder, and optional add-ins. Bring to a gentle boil, then simmer 4 – 5 min until sugar dissolves.
  3. Add jalapeños and simmer 3 – 4 min until softened and slightly darkened.
  4. Pack into a sterilized quart jar; pour hot syrup over, leaving ¼-inch headspace. Remove bubbles, wipe rim, and seal.
  5. Storage:
    • Fridge: Let cure 1 week, keeps 2 – 3 months
    • Canning: Boiling water bath 10 min (adjust for altitude), shelf-stable up to 1 year
