Description

This easy rice cooker gyudon combines tender beef and sweet onions with savory, dashi-infused rice for a comforting Japanese meal made in one pot.


Ingredients

For the beef marinade

  • 1/2 lb thinly sliced beef
  • 1/2 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1/2 tbsp hondashi
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 2 tbsp mirin

For the rice

  • 1 cup rice
  • Water
  • 1/2 yellow onion, thinly sliced
  • 1 tbsp soy sauce

For serving

  • Beni shoga (optional)
  • Green onion, thinly sliced

Instructions

  1. To a large bowl, combine the beef, ginger, 2 tablespoons soy sauce, hondashi, salt, sugar, and mirin to marinate. Set aside while you start the rice.
  2. Add the rice, water (you will use as much water as you normally would depending not the type of rice you are using), sliced onion, and 1 tablespoon soy sauce to your rice cooker. Start cooking.
  3. About halfway through cooking (for my rice cooker, this is about 15 minutes into start time – if your rice cooker doesn’t have a timer, don’t stress! Just add the beef about 15 minutes in), add the marinated beef over the partially cooked rice. Close the lid and continue cooking.
  4. Once the rice cooker finishes, mix the beef and onions with the rice.
  5. Top with beni shoga and sliced green onion.
